Ingredients You Need

The best thing about my easy cheeseburger pie recipe is that it’s made with everyday ingredients you probably already have in your kitchen. See for yourself.

  • Salt
  • Large onion
  • Garlic powder
  • Mustard powder
  • Ground black pepper
  • Fat: Choose unsalted, grass-fed butter for the best flavor. Alternatively, use beef tallow or other fat.
  • Whole eggs: Use large, free-range or pasteurized eggs, or better yet, raise your own!
  • Ground beef: For a juicy, flavor-packed keto cheeseburger pie, I use grass-fed beef that’s 80% lean ground beef and 20% fat grind (80/20 blend). A leaner beef can result in a dry pie.
  • Shredded cheese: Freshly shredded mozzarella or cheddar cheese works best for this recipe, but you can use whatever type of melty cheese you have.

Step-By-Step Instructions

This easy cheeseburger pie is a family-favorite recipe that makes a regular appearance in our weekly meal prep menu. As it is, this recipe can easily make six servings. If you’re expecting a crowd or want to have leftovers for the week ahead, you can simply double the recipe and bake in a 9-inch pie plate or casserole dish. Let’s get started!

  1. Brown the meat. Preheat the oven to 350°F (175°C) and grease the pie plate or casserole dish with some of the fat. In a heavy-bottomed large skillet, lightly brown the ground beef in fat over medium-high heat. Transfer to the baking dish once cooked.
  2. Prepare the egg mixture. Use the final amount of fat and sauté the onions for 5 to 7 minutes, stirring frequently. As the onions cook, beat the eggs in a separate bowl and add herbs and seasonings. Pour over the ground beef mixture so it sinks into the meat. Shake gently if needed.
  3. Arrange toppings and bake. Arrange the cooked onions evenly over the meat and egg mixture, then top with shredded cheese. Bake for 20 minutes until the center is set and the cheese is bubbly and melted. Allow to rest for 5 minutes before slicing and serving.

Variations

In essence, this easy cheeseburger pie recipe is a simple base for many spin-offs. Treat is a blank canvas, all set to absorb your own taste and dietary preferences. Think of all the delicious burger options out there and go wild with your favorite flavors! Here are some of my favorite ideas:

  • Traditional burger: Prepare a hamburger-themed meal and serve on a bed of crisp lettuce with classic burger add-ins like homemade pickle relish and thick slices of tomatoes. Offer a bottle of mustard or sugar-free ketchup on the side.
  • Bacon cheeseburger pie: For extra protein, fry up some bacon, cut it into small pieces, and add to the meat mixture before cooking.
  • Slow-cooked meat pie: Make this in the slow cooker by following the same prep steps and cook on low for 4 to 5 hours until the center of the pie is set. It’s an easy crockpot-ready recipe!
  • Hidden organ meat: Make this recipe even more budget-friendly and give a nutritional bump by adding ground beef heart or beef liver to the meat mixture. The other flavors will mask it, so no one can tell it’s even there! Cooking up a 50% mix of ground beef with ground beef heart or a more daring mix of organ meats like kidney, heart, and liver is a great way to go.
  • Spicy cheeseburger: Add some heat by mixing jalapeños on top or baked in the middle. Garnish with shredded pepper jack cheese and serve with a dollop or two of sour cream to cool your mouth off.
  • Blue cheese bison burger: Make some minor tweaks by swapping out ground beef for ground bison meat, then top the casserole with blue cheese instead of shredded cheese.
  • California burger: Dress up your meat pie Cali style with homemade guacamole or avocado, thickly sliced beefsteak tomatoes, and crisp purple onion. Finish off with Monterey Jack cheese for the topping.

Expert Tips

  • Taste and adjust! Taste as you cook, especially when browning the ground beef. Taste after seasoning with salt, pepper, and herbs, then adjust as needed. Remember that this is your base flavor, so it’s important to get it right.
  • Avoid a soggy meat pie. Cook the ground beef thoroughly and drain excess grease before mixing with other ingredients. Sauté the onions and any additional vegetables until most of the moisture evaporates.

How to Store This Recipe

This crustless keto cheeseburger pie can be made ahead of time and stored in the fridge to reheat before serving. Let it cool completely before transferring individual slices to an airtight container to prevent it from getting soggy. It should keep well in the refrigerator for 3 to 4 days.

This is also a good recipe to store in your freezer because it’s so freezer-friendly! Place the pie in a freezer-safe bag and squeeze out any remaining air, making it as compact as possible.

Once ready to enjoy, let it thaw overnight in the fridge. Pull it out and place it in the oven at 250°F (120°C) for 10-15 minutes. Use a lower temperature here to avoid overcooking the dish, adding a few slices of butter across the top to prevent the meat from drying out.

  1. Did I miss the step where the cheese gets melted prior to putting it on top of the casserole? The instructions say to pour the melted cheese onto it, but there’s no direction prior to that on how to melt it.

    1. Shredded cheese is sprinkled as the casserole topping. It melts as it bakes. There will be no pouring of melted cheese. I hope that helps!
