Ingredients

Butter – Isnโ€™t everything better with butter? Choose grass-fed butter, if you can.

Eggs โ€“ Opt for free-range, pastured eggs or raise them yourself!

Queso fresco – A soft authentic Mexican cheese

Salsa – A standard tomato salsa is all you need, although I also recommend Tomatillo Avocado Salsa.

Salt and pepper – Just a little seasoning to taste

Directions

Begin by warming the butter over medium-high heat in a skillet or frying pan.

Next, pour eggs in the pan and leave for 2 minutes until edges cook and eggs start to set.

Then, lower the heat until the egg is almost cooked through and arrange the cheese and salsa on one half of the omelette.

The cheese is soft; just crumble it with your fingers as you put it in.

Fold the omelette in half by bringing the egg side up to cover and rest on top of the filling.

Finally, remove from heat and serve hot. Season with salt and pepper to taste.

    My daughter is in her last year of school and had taken to skipping breakfast. Mostly because she isn’t a big fan of the food you usually eat at breakfast (sugary cereal or toast) but also because she thought skipping breakfast would mean less food and was therefore healthier, which we know isn’t try but try telling a 17 year old girl that! .
    I wasn’t super happy and have been trying to temp her with different breakfast items. I told her I am happy to get up and cook you a breakfast as long as you eat it.
    There has been some give and take and some things have been a total miss, but this omelette was a massive success. Tacos are one of her favorite dishes so selling a taco style omelette went well and she loved the taste. She had some avocado and a little hot sauce with hers and she has asked for it 4 times over the last fortnight.
    So THANK YOU!!! It was stressing me out thinking of her going to school and trying to study on an empty stomach and also I didn’t like the “starving myself” mindset. So this has been a massive game changer for us!
