One of the challenges of the carnivore diet is how tricky it is to create a diverse meal plan. That’s why I’ve tried countless recipes over the years using different carnivore-friendly ingredients. Of course, there were hits and misses, but I’ve compiled my hits in The Carnivore Cookbook with an epic collection of over 100 recipes. Many fan favorites are included toward the end of this post.

Creating delicious carnivore dinners is all about choosing the right ingredients. However, I know that this can be tricky if your choices are limited to animal products and zero-carb foods. So, I’ve compiled a few ingredient lists that can help diversify your carnivore meal plan.

Meat, Fish, and Poultry

First up, let’s talk about what would make up the bulk of your carnivore dinners: meat! Generally, the meat category seems pretty limited, but there are a lot of options if you look closer.

Beef

Beef is one of the best sources of protein for any diet, but it’s a favorite among carnivores because of its flavor and versatility. Different cuts of beef offer unique textures and tastes, and there are countless options for cooking. 

  • Ribeye is known for its marbling and tenderness, making it ideal for grilling and pan-searing. It has a rich, juicy flavor that stands out on its own or with simple seasonings.
  • Sirloin is a leaner cut with a robust beefy flavor, versatile for roasting, grilling, or stir-frying. 
  • Ground beef is incredibly versatile and can be used for burgers, meatballs, and casseroles. It cooks quickly and is easy to flavor with different seasonings, perfect for meal prep and bulk cooking.
  • T-Bone combines the tenderness of a filet mignon with the rich flavor of a strip steak. It is excellent for grilling or broiling and makes an impressive presentation, perfect for special dinners. When considering T-bone vs. ribeye, the former is a better option if you want a dual flavor profile.
  • Rib Roast, also known as prime rib, is a large, flavorful cut ideal for roasting, especially for holiday meals and gatherings. It is rich, juicy, and often served au jus. I like to pair it with deviled eggs!

Pork

Pork offers a variety of delicious cuts, each bringing its unique flavor and texture to the table. Here are a few options you can consider:

  • Pork Chops are juicy and tender, making them ideal for grilling or baking. They are versatile with various marinades and rubs and cook quickly so they are great for weeknight dinners. Blackened pork chops are my favorite recipe!
  • Tenderloin is a lean and tender cut that cooks quickly. It can be marinated or rubbed with spices for extra flavor and is great for roasting or grilling.
  • Bacon adds a rich, smoky flavor to any meal. It can be used as a topping or as a side dish and is delicious on its own or wrapped around other meats.

Poultry and Eggs

Poultry provides leaner meat options that are still packed with flavor. Plus, it tends to be more affordable than beef, which is great if you want to do the carnivore diet on a budget

  • Chicken Thighs are more flavorful and juicy than chicken breasts, perfect for grilling, roasting, or slow-cooking. They stay moist and tender even with extended cooking times.
  • Chicken Breasts are a go-to option if you want a leaner source of protein. They’re also very easy to cook whether you’re air-frying or baking them in the oven.
  • Whole Roasted Chicken is easy to prepare and can provide several meals. It is versatile and can be seasoned in numerous ways, making it economical and great for meal prep. Plus, you can easily buy a rotisserie chicken from the grocery store if you don’t want to make it at home.
  • Duck offers a rich and savory taste, which is why I love it for special occasions. It is higher in fat, providing a unique and indulgent flavor, and can be roasted, grilled, or seared.
  • Eggs are incredibly versatile and can be cooked in numerous ways, from scrambling and frying to poaching and boiling. Plus, they are a great source of protein and healthy fats. Although eggs aren’t a common ingredient for dinner, they’re a great addition to any dish if you want to up your protein and fat intake.

Fish and Seafood

Fish and seafood are delicious and rich in omega-3 fatty acids, which are essential for a healthy diet. There are too many options to mention, so I’ll include some of my favorites:

  • Salmon is a go-to because of its rich flavor and high omega-3 content. It can be grilled, baked, or pan-seared, and tastes great even with minimal seasonings. For fish that’s more nutritious and flavorful, go for wild salmon.
  • Sardines are nutrient-dense and easy to prepare, which is great if you’re in a pinch and want to get dinner ready in no time.
  • Shrimp cook quickly and are versatile enough to be used in various recipes.

Organ Meats

If you’re new to the carnivore diet, you’re probably new to benefits of organ meats, too. First off, don’t be intimidated. These are nutrient-packed foods that can provide the essential vitamins and nutrients that you would otherwise get from certain plant foods.

Organ meats, also known as offal, are nutrient-dense options that add a unique flavor and variety to the carnivore diet. According to this 2022 journal published by the University of Minnesota Duluth, organ meats are even more nutrient-dense than skeletal muscles and plant foods.

  • Liver is one of the most nutrient-rich organ meats, providing high amounts of vitamin A, iron, and B vitamins. It can be sautéed, grilled, or made into pâté, offering a rich and slightly sweet flavor. When comparing beef and chicken liver, go for the former if you want a stronger flavor and the latter for something more mild. 
  • Kidneys are rich in protein, iron, and vitamin B12. They have a distinct taste and are often used in stews and casseroles. When properly prepared, kidneys can be tender and delicious.
  • Heart is a lean and mild-flavored organ meat, high in protein and iron. It is tender and can be grilled, slow-cooked, or added to stews for a nutrient boost.
