One of the things I love most about this breakfast sausage casserole recipe is that you don’t need a whole laundry list of ingredients.

  • Salt
  • Dried thyme
  • Onion
  • Garlic
  • Ground black pepper
  • Eggs: I use large eggs in most of my recipes, this one included. These are essential for holding the casserole together and packed with protein and fats while keeping the carbs low. You simply cannot replace eggs with any alternative ingredient!
  • Cheese: I prefer the melty tanginess of shredded cheddar cheese and the sharp flavor of Parmesan, but you can get creative and use what you have available or what you like best.

As you know, I’m all about simplicity, and this easy keto breakfast casserole recipe is just that. Follow these steps, and you’ll create the perfect casserole even on your first try!

Step 1: Sauté the aromatics

While preheating the oven, sauté the onion and garlic in a pan with melted butter over medium-high heat.

Step 2: Cook the sausage

Remove the sausage from its casing and add it to the pan. Break into smaller pieces and brown all sides evenly.

Step 3: Whisk the egg mixture

As the sausage cooks, whisk the eggs in a bowl along with shredded cheese, thyme, and seasonings.

Step 4: Combine ingredients

  • Remove the sausage from its casing and add to the pan also. Break apart into smaller pieces and brown all sides evenly, about 8 minutes.
  • While the sausage browns, whisk 10 eggs in a large bowl. Mix in the cheese, thyme, salt, and pepper.
  • Transfer meat to an 8×8-inch (20×20 cm) glass baking or casserole dish. Arrange in a single, even layer on the bottom.
  • Pour the egg mixture over the meat. Gently jiggle or tap the dish so the egg can settle down around the meat.
  • Bake for 20 minutes, until eggs are set and top is golden brown. Let rest 5 minutes before slicing and serving warm.
