What is the Carnivore Diet?

Have you heard about the fastest way to reset your health? We’ve all heard how helpful elimination diets can be and see the success of keto, gluten-free, GAPS, AIP and whole30 style diets.

A carnivore diet takes these principles to the next level. The goal is to eat only the most bioavailable, easiest to digest foods. What are these? Well, in sum, they are animal foods. With a diet built around animal foods, we successfully avoid a myriad of toxic plant compounds that may be secretly wreaking havoc on our health.

Many people find this WOE enjoyable because carnivore diet recipes are easy to make and naturally very satiating, leading to rapid fat loss. Learn more about what to eat on a carnivore diet and get started with our carnivore diet food list.

Ground Beef, Eggs, and Cheese

Fatty ground beef is an essential staple in my meal prep routine. It’s easy to work with, widely available, and budget-friendly. I always have ground beef in my freezer. There are 20 grams of protein, 18 grams fat, 0 fiber, 0 carbs per 4 ounces of 85% lean grass-fed ground beef. (1

This is a great protein to fat ratio for me and works to feed my whole family. You can find more meal prep ideas for breakfast, lunch, and dinner in my collection of carnivore ground beef recipes.

Another staple for low carb dieters is eggs (assuming you tolerate them). We get fresh eggs daily from our chickens and ducks. Eggs help hold the casserole together. Without them, we would have a soupy mess. The breakfast vibe comes from using eggs, but honestly, I have no problem eating this carnivore casserole for breakfast or dinner!

Cream cheese and cream are the final ingredients in this delicious meal. Eating enough fat is important for maintaining energy levels and healthy hormone production. (2, 3) 2 tablespoons of cream cheese has 1 gram protein, 10 grams fat, and 2 grams carbs making it a great way to increase dietary fat and flavor. (4)

How to Make Carnivore Casserole

Carnivore casserole is one of my favorite carnivore dinner recipes that you can make any day of the week. My family loves it for breakfast, too, in rotation with carnivore breakfast casserole. The best part is that you only need 5 simple ingredients to make this dish and it only takes 5 minutes to prep and 25 minutes to bake.

Scroll to the bottom of this post for a printable recipe card with a full list of ingredients, measurements, and step-by-step instructions.

Ingredients You Need

  • Ground beef: An 80/20 blend gives the casserole richer taste and better moisture.
  • Eggs
  • Heavy cream: For richness and moisture while helping create a velvety, custard-like base.
  • Cream cheese: Full-fat gives the best texture.
  • Salt

Step-By-Step Instructions

You’re only 30 minutes away from a hearty carnivore casserole! Follow the steps below carefully and you can’t go wrong.

Step 1: Prep the oven

Preheat the oven to 350°F (175°C).

Step 2: Cook the ground beef

Lightly brown the meat in a skillet over medium heat. Break apart any clumps and stir around for about 5 minutes.

Step 3: Mix

Whisk the eggs in a large bowl. Add the cream, cream cheese, and salt. Mix well to combine. Add meat and mix again.

Step 4: Bake

Pour the egg meat mixture into a greased 9-inch round pie plate or something similar. Bake for 25-30 minutes until eggs set. Let rest for 10 minutes, then slice and serve.

Expert Tips

  • If you don’t want to go all out and bake the meat and eggs together, a quicker version of scrambled eggs with ground beef is the next best thing that will save you a bit of cooking time.
  • Add optional carnivore boosts like crispy bacon, crumbled sausage, shredded rotisserie chicken, or even chopped ribeye to turn this casserole into a protein-packed feast with more texture and flavor variety.
  • Add an extra ounce of cream cheese for an even richer, custard-like finish. This is especially helpful if your beef is leaner.

How to Store This Recipe

Store leftovers in an airtight container in the refrigerator for up to 4 days. The casserole holds its structure well and reheats nicely without drying out. To freeze, slice the casserole into portions, wrap tightly, and place in a freezer-safe bag or container. Freeze for up to a month.

To reheat, bake at 325 F for 8 to 10 minutes until heated through. To reheat from frozen, thaw overnight in the fridge, then reheat in the oven at 325 F for 10 to 15 minutes.

How to Serve Carnivore Casserole

Carnovore casserole stands on its own, but you can easily dress it up or pair it with complementary flavors. For breakfast, it’s delicious drizzled with melted butter or browned butter or topped with crispy bacon bits or crumbled sausage. For dinner, serve alongside other carnivore favorites like beef bone broth, steak bites, or air fryer chicken breasts.

  • ½ cup heavy cream
  • 2 tablespoons cream cheese softened
  • 1 teaspoon salt

Instructions

  • Preheat the oven to 350 °F.
  • Lightly brown meat in a skillet over medium heat.
  • Whisk the eggs in a large bowl. Add the cream, cream cheese, and salt. Mix well to combine. Add meat and stir well.

Notes

I only have access to lean meat and therefore, usually, add 1/2 tbsp cooking fat before browning the beef. If your ground beef is sufficiently fatty, you don’t need additional cooking fat.

I added some herbs, do you think this would do well as muffin size for freezing? I think I might try it. Is this and similar easy recipes in your cookbook because I like the ease of it!!! Thank you

I have just made this for my lunch-time breakfast. I used 20% fat minced beef and 100g of cream cheese otherwise exactly as the recipe.
It was absolutely delicious, thank you so much, l will definitely make again!

I’ve been following a carnivore woe, but I have a problem eating enough protein. Eating 1/4 piece of this casserole will provide me with at least 30g. I used an extra egg and a handful of shredded cheddar. Other than that, followed directions as written. Bonus – I actually like it straight from the fridge 😊 Thanks for this recipe.

    1. Way to go, Angela! Cheddar is a great add in. I’m so happy to help find creative ways to increase protein. It’s an important macro. Visit again soon to try more recipes!

My husband and I absolutely love this! I was thinking of doubling the recipe and putting in a 9×13 pan. 🙂

    1. Yes, Essie, go ahead and double the recipe. It works wonderfully! I do this all the time. Thanks for sharing your review. I’m so happy you and your husband are enjoying a carnivore meal together.

I made this today with half ground beef and half Butcherbox sugar free breakfast sausage. OMG, it’s even better! I realize this may make it Keto because of the spices in the sausage, but that still works for me.

      2. Hi Essie, This recipe doesn’t freeze well but will freeze sufficiently. The texture is softer and not quite as nice after freezing and thawing, but it’s still manageable.

What is the serving size for this? How many pieces do you eat for a meal? I made this and it was good, kind of greasy from the ground beef fat. I’m not used to to buying the 80/20.

  7. Would this still work okay without the cream and cream cheese? I’m dairy free but can use rendered beef fat if that helps.

    1. Kaya, you can make this recipe dairy-free by omitting the cream and cream cheese, and adding 2 tbsp of lard, tallow, or other fat of your choice instead. You could also get away without any added fat, but it’s nice for extra flavor, nutrition, and producing a moist texture. Hope this helps! Enjoy!
