Lazy Ketogenic Chocolate Peanut Butter Cups

You caught me! There isn’t a true Reese’s filling inside these scrumptious little cups. Why not? Simply because I don’t see the reason to spend extra prep time make it so. I’ve made them both ways and they taste just as good with everything is all mixed in together and I get an extra 20-30 minutes to play with our children instead of being in the kitchen.

If you do feel inclined to take this recipe to the next level, follow these directions to achieve that drool worthy creamy inside:

  1. Mix all the ingredients together, reserving the peanut butter aside.
  2. Pour a layer of chocolate in your mold, place in the fridge to set, remove and divide the peanut butter evenly between each piece. Place the peanut butter in the center of each chocolate disk and make sure it doesn’t spread out the edges, return to the freezer again for 5 to 10 minutes.
  3. Cover the peanut butter with the remaining chocolate mixture and freeze to set again. It takes some extra effort and time (which is why I generally don’t do things like this) but it sure does look pretty once they are all done! If you do this method, add an extra 20 minutes or so to the prep time.

Be sure to keep these ketogenic chocolate peanut butter cups in the fridge, they will melt if left out in the heat!

Alternatives:

Instructions
  1. In a double boiler or small pot with bowl insert (DIY double boiler), melt the coconut oil or butter with the nut butter. Stir to combine.
  2. Remove from heat and add the cacao powder, powdered sweetener, vanilla and salt.
  3. Whisk together until all ingredients are well-combined. For the smoothest chocolate possible, make sure there are no lingering lumps of powder in the bowl.
  4. Pour mixture into a mold or dish of choice and transfer to the freezer. Let chill for 20 or so minutes until solid. Store in fridge or freezer.
