  • Chuck roast: A favorite for slow-cooking because connective tissue breaks down into gelatin, adding body to the sauce. I suggest grass-fed chuck roast from White Oak Pastures.
  • Mushrooms: Slice them up and let them simmer in the creamy sauce! I like using chestnut mushrooms because they are flavorful, but you can use your favorite kind. Button mushrooms are also a good choice.
  • Apple cider vinegar: Helps balance the sauce’s creamy richness and tenderizes the beef as it cooks. 
  • Sour cream: Adds creaminess and tang, creating the signature beef stroganoff sauce.
  • Xantham gum (optional): Acts as a low-carb and gluten-free thickening agent to give the sauce a silky, smooth consistency without the need for flour or cornstarch.

  1. Layer the beef, veggies, and broth into a slow cooker
  2. Turn on the machine to cook for a few hours.
  3. Stir in some sour cream towards the end of the cooking time.
  4. Sprinkle the optional xanthan gum to thicken the sauce even more.
  5. Serve warm.

Substitutions

  • Bone broth: You’ll lose a lot of flavor with these alternatives, but it’s still possible to use beef stock, vegetable broth, or water with a splash of Worcestershire sauce if bone broth isn’t available.
  • Apple cider vinegar: Substitute with red or white wine vinegar, lemon juice, or dry white wine.
  • Sour cream: No sour cream available? Cream cheese will be the best second choice. Followed by coconut cream to make this dish dairy-free.

Jessica’s Tips

  • Cut the meat against the grain for maximum tenderness. Muscle fibers run in a visible direction in beef, and cutting perpendicular to them shortens those fibers so the meat shreds into clean, tender pieces rather than stringy clumps. It takes ten extra seconds and makes a noticeable difference.
  • Keep the lid closed throughout cooking unless you are adding ingredients. Every time you lift it, trapped steam escapes and the temperature drops, adding significant time before the cooker can recover. Set it and walk away.
  • Done means the meat pulls apart easily with two forks with no resistance, the fibers have separated cleanly, and there is no rubbery or springy texture when you press it. For stroganoff, you want the beef deeply tender and falling apart. If you pull it and the meat still has resistance, put the lid back on and give it another thirty to forty-five minutes.

How to Store This Recipe

Cool leftovers or made-ahead beef stroganoff completely and transfer it into an airtight container. Store in the refrigerator for 3 to 5 days or in the freezer for up to 3 months. To reheat, warm on the stovetop over medium heat until heated through.
