No Carb Desserts

Where do carbs come from in dessert?

Sugar is the #1 source of carbs.

Followed by flour, nuts, and fruit.

These ingredients are minimized on a keto diet and not allowed on carnivore, so you don’t have to worry about them too much.

Why make the effort to eat sugar free and low carb?

Well, eating zero carb is a useful tool for many people. From fat loss to decreased inflammation, cutting the carbs can also improve metabolism, cognitive function, and energy levels throughout the day. (1)

What Dessert Has No Carbs?

Diary foods like cream cheese, sour cream, and heavy cream are some of the best ingredients for no carb no sugar desserts. Dairy has a subtle sweetness and incredible mouthfeel. The thick creamy texture is so enjoyable!

True “no carb desserts” are hard to come by, but we can get pretty close! 

I consider anything under 3 g net carb to be 0 carb and 0 sugar. 1-3 grams of carb per serving has negligible amounts of carbs and is unlikely to cause any damage to your progress. These macros are totally fine for a carnivore or any other low-carb diet.

It’s hard to avoid carbs completely any time you use dairy. Per 1 g tablespoon of heavy cream, there is 1 g carbohydrate. (2) Don’t sweat these minuscule amounts of carb on your carnivore. They won’t hurt you!

Zero Carb Sweeteners

I had lots of fun creating keto desserts without any added sweetener in my first cookbook The Ketogenic Edge Cookbook. This keto recipe collection concludes with easy keto dessert recipes made without refined sugar, added sugar, or keto sugar substitutes! All the desserts are made exclusively of simple, unprocessed real food ingredients. (Keep in mind the recipes in this book are sugar-free and made without keto sweeteners, but not necessarily zero carb).

Through this experience, I learned a lot about how to sweeten desserts without sugar.

Vanilla Extract

Don’t underestimate the power of vanilla extract! This is what I use for most of the carnivore-friendly desserts. As little as ½ teaspoon will enhance the flavor of a recipe without and fiber or anti-nutrients.

Lemon Extract

Similar to vanilla extract, this is a great way to add flavor to zero carb recipes.

Stevia Tincture 

I make a homemade stevia extract but you can buy one too. It’s handy to have for hot teas, coffee, keto eggnog, and other recipes.

Are There Any Carnivore Desserts?

The short answer is Yes, but you shouldn’t eat them every day if your main goal is fat loss. Dessert is still dessert. It’s highly palatable and easy to eat more than you need. You will gain weight anytime you eat a surplus of calories. (3, 4)

Fueling on fatty animal protein every meal, every day does wonders for controlling cravings. We’re training our taste buds to expect savory flavors over sweet ones with each bite we take.

After completely eliminating all carbs (sugars) from your diet for a while, subtly sweet things become extremely satisfying. A little sweetness goes a long way when you only eat meat and fat!

Just because you’re a carnivore, doesn’t mean you need to be 100% strict all the time, forever, always. Most people don’t notice any negative effects from a splash of vanilla extract from time to time.

All individual recipes have notes about adapting to strict carnivore guidelines.

When it comes to making desserts, do what is best for your context and goals!

You might be accustomed to keto sweeteners already. Assuming they don’t cause digestive distress or trigger unhealthy eating habits, these are fine to continue using.

Desserts are extra, nonessential recipes that are nice on occasion but shouldn’t be the main portion of any diet. Overeating any kind of food won’t lead to healthy eating habits or long-term fat loss.

Everything on this list is going to be leaps and bounds better for your health than a Krispy Kreme doughnut!
