Slow cooker beef stroganoff has earned a permanent place in my meal prep rotation for one simple reason: it delivers a deeply nourishing, protein-rich dinner with almost no effort on my part. After years of cooking real food for a busy family, I have a deep appreciation for recipes that use quality ingredients, require minimal hands-on time, and still land on the table tasting like something special. This one does all three.
What makes this version stand out beyond the convenience is that it fits naturally into a low-carb, whole food lifestyle without any modifications needed. If you are already exploring keto slow cooker recipes, this crock pot beef stroganoff belongs at the top of your list. The creamy sauce is built on real ingredients, the beef is the star, and the whole thing comes together with about ten minutes of actual work before the slow cooker takes over completely.
The long, slow cook transforms an affordable cut of beef into something fork-tender and rich in a way that a quick stovetop method simply cannot replicate. You’ll have a meal that feels indulgent and comforting without compromising anything. It reheats beautifully too, which makes it one of those reliable weeknight staples worth coming back to again and again.

Ingredient Notes
- Chuck roast: A favorite for slow-cooking because connective tissue breaks down into gelatin, adding body to the sauce. I suggest grass-fed chuck roast from White Oak Pastures.
- Mushrooms: Slice them up and let them simmer in the creamy sauce! I like using chestnut mushrooms because they are flavorful, but you can use your favorite kind. Button mushrooms are also a good choice.
- Apple cider vinegar: Helps balance the sauce’s creamy richness and tenderizes the beef as it cooks.Â
- Sour cream: Adds creaminess and tang, creating the signature beef stroganoff sauce.
- Xantham gum (optional): Acts as a low-carb and gluten-free thickening agent to give the sauce a silky, smooth consistency without the need for flour or cornstarch.
I prefer using beef broth for this recipe, and I almost always have homemade beef bone broth  in my freezer. However, Kettle and Fire makes an organic shelf-stable broth you can store in your pantry. You can read my Kettle and Fire Bone Broth review and learn why they are my top choice.
Step-By-Step Instructions
This mouthwatering slow cooker stroganoff is my favorite dump-and-go recipe! Follow these simple step-by-step instructions for a flawless, flavorful dish that’s as easy to prepare as it is to enjoy. Let’s get started!
- Layer the beef, veggies, and broth into a slow cooker
- Turn on the machine to cook for a few hours.
- Stir in some sour cream towards the end of the cooking time.
- Sprinkle the optional xanthan gum to thicken the sauce even more.
- Serve warm.
Substitutions
Don’t have some of the ingredients on hand or prefer to use other ingredients? Try these ingredient swap ideas:
- Chuck roast: If chuck roast isn’t available, you can substitute it with beef stew meat or short ribs for similar tenderness. Well-marbled cuts are the best because they stay tender and juicy during slow cooking. Grab our printable cheat sheet for the best slow cooker beef cuts!
- Bone broth: You’ll lose a lot of flavor with these alternatives, but it’s still possible to use beef stock, vegetable broth, or water with a splash of Worcestershire sauce if bone broth isn’t available.
- Apple cider vinegar: Substitute with red or white wine vinegar, lemon juice, or dry white wine.
- Sour cream: No sour cream available? Cream cheese will be the best second choice. Followed by coconut cream to make this dish dairy-free.
Jessica’s Tips
- Cut the meat against the grain for maximum tenderness. Muscle fibers run in a visible direction in beef, and cutting perpendicular to them shortens those fibers so the meat shreds into clean, tender pieces rather than stringy clumps. It takes ten extra seconds and makes a noticeable difference.
- Keep the lid closed throughout cooking unless you are adding ingredients. Every time you lift it, trapped steam escapes and the temperature drops, adding significant time before the cooker can recover. Set it and walk away.
- Done means the meat pulls apart easily with two forks with no resistance, the fibers have separated cleanly, and there is no rubbery or springy texture when you press it. For stroganoff, you want the beef deeply tender and falling apart. If you pull it and the meat still has resistance, put the lid back on and give it another thirty to forty-five minutes.
How to Store This Recipe
Cool leftovers or made-ahead beef stroganoff completely and transfer it into an airtight container. Store in the refrigerator for 3 to 5 days or in the freezer for up to 3 months. To reheat, warm on the stovetop over medium heat until heated through.
What to Serve with Slow Cooker Stroganoff
Serve warm with low-carb options like broccoli or cauliflower rice, zucchini noodles, spaghetti squash, or miracle noodles. For non-keto dieters, it’s delicious with egg noodles, mashed potatoes, or any type of rice.
I like to bulk-prep carbs for the family and keep them ready in the fridge for meals through the week. Then, I cook meat and vegetable dishes like this and easily pair it with the pre-prepped options for those who want and serve it solo for those who don’t.

I love that you called out chuck roast as both cheap and tender after slow cooking—that kind of honest, practical detail makes a recipe feel genuinely doable, not just aspirational.
It’s a go to cut for many slow cooker and instant pot recipes! I love it. Hope you enjoy this dish.
What would be a good alternative to thicken the sauce?
Hi Christian, guar gum is commonly used as a xanthan gum replacement. You could also use ground flax meal.
Three words that I love…Easy…beef…and slow cooker on any recipe and this had them all woohoo! This turned out so good, the apple cider vinegar was a refreshing twist as it warmed up the flavours, the zoodles I made were all gone as my family devoured it with the leftover creamy sauce…success.
We love hearing when a recipe is a success. Thanks, Deb!
