This lemon infused ketogenic green smoothie was created in response to the many people who ask us about green smoothies on keto. The mixture of coconut milk with spinach and avocado blends up into a thick, creamy potassium rich cup. The flavor is enhanced with fresh mint and lemon balm leaf. Extra water and/or ice cubes are added to achieve just the right texture. I like a thinner smoothie and used 1 cup of water and a handful of ice cubes to get my texture right.
I had a mixture of licorice and star anise tea already made and added it into the blender to fullfill the role of “water”. The flavors were awesome! Mint or lemon balm tea would also be a great choice. Using herbal infused teas in place of water (when applicable) is a fun way to affect the flavor and medicinal benefits to recipes.
Extra Add-in Ideas for a Ketogenic Green Smoothie:
- 1 tablespoon chia seed
- 1 tablespoon cacao nibs
- 10 to 15 drops peppermint spirits
- 1/2 teaspoon spirulina
- small handful of fresh, seasonal berries
Adapt this low-carb ketogenic green smoothie for kids or others in the family who consume more carbs by adding local fruits like peaches, plums, and strawberries. In place of the coconut milk, you can add fresh, raw dairy milk or yogurt into the mix. I drank many smoothies during my low-carb pregnancy which I talk a bit about here in my 33 week update.
