30-Minute Healthy Chicken Francese Recipe

Healthy chicken francese is an easy homemade skillet dinner that’s easy enough for weeknights yet elegant enough for a special occasion! Chicken breasts are pan-fried in a low-carb, gluten-free breading and served hot in a creamy lemon-garlic sauce. It’s versatile, cooks in less than 30 minutes, and is always a crowd-pleaser.

As a dish with many names, it gets confusing to keep it all straight. Best known as chicken francese, this Italian-American dish is also called chicken francaise, chicken French, and chicken Rochester. Italian immigrants adapted the original dish, veal francese, with more affordable ingredients like chicken. In short, this is a classic restaurant dish you can actually cook just as well at home. 

How to Make Healthy Chicken Francese

There’s nothing better than a wholesome family dinner made with healthy, whole food ingredients. This gluten-free chicken francese tastes amazing and is a great example of  a popular recipe getting a makeover with keto macros and is ideal for anyone on a low-carb diet. 

Traditional versions typically include white wine like Chardonnay, Pinot Grigio,  or Sauvignon Blanc to make the sauce, but this version skips the wine to keep things family-friendly.

Ingredients You Need

For the chicken:

  • Eggs
  • Parmesan cheese: Finely grated cheese mixes best with the flour and cooks into a crispy crust
  • Coconut flour: Keeps this recipe gluten-free and low-carb. It’s on my list of keto pantry staples I always keep on hand!
  • Salt and ground black pepper
  • Butter
  • Chicken breasts: Boneless, skinless chicken breast is the ideal choice, but you can substitute with skin-on and buy bone-in (then cut it off), if preferred.

For the lemon-garlic sauce:

  • Butter
  • Garlic cloves
  • Chicken broth: I usually go for low-sodium chicken broth. Deglaze the pan with broth before starting the sauce.
  • Heavy cream: For a thick and creamy sauce.
  • Parsley
  • Lemon: Juiced, then added to the sauce for a bit of tang. Save some extra slices for garnish.

Step-By-Step Instructions

If you love chicken piccata, you’ll love chicken francese, which is similar yet richer and creamier. Follow the simple directions for this healthy chicken francese recipe, and you’ll have a delicious, tender chicken dinner ready in half an hour or less.

Step 1: Prep for dipping

First, find 2 shallow plates you can use for dipping the chicken in. Whisk the eggs in a bowl and pour them into one of these shallow dishes or plates. Next, combine the cheese, flour, salt, and pepper in a separate bowl, then transfer the dry mixture to the second shallow dish or plate.

Heat 4 tablespoons of butter in a skillet over medium-high heat while cutting the chicken breasts into 4 even-sized pieces.

I suggest cutting the chicken lengthwise from tip to tip rather than crosswise. You’ll end up with uneven portions if you cut crosswise. The two smaller pieces will cook faster, resulting in unequal cooking times.

Step 2: Dredge and cook chicken

Take one piece of chicken at a time and coat both sides in the dry flour cheese dish. Then, dip both sides in the whisked eggs. This is called dredging. Arrange the meat in the pan and repeat for all portions.

Cook the chicken for about 4 minutes per side over medium heat until a golden brown crust forms, and the meat cooks through. Remove from heat and set aside on a paper towel-lined plate.

Step 3: Make the lemon butter sauce

Reduce the heat to low, add the remaining 2 tbsp butter, and sauté the garlic for 30 seconds until fragrant. Whisk in chicken broth and bring it to a simmer. Add the cream and parsley; continue cooking for two more minutes as the liquid reduces. Finally, add the lemon juice slowly while whisking continuously to avoid curdling the cream.

Step 4: Garnish and serve

Remove the sauce from the heat and return the cooked chicken to the pan. Serve from the skillet with generous portions of sauce or plate each serving individually. Garnish with extra parsley if you like.

  • Pound the chicken: If your chicken breasts are uneven, lightly pound them to an even thickness before cutting. This ensures every piece cooks at the same rate and prevents overcooking the thinner ends.
  • Let the excess egg drip off: After dipping in the egg wash, give each piece a second to drip. Too much egg will cause the coating to slide off during cooking instead of forming that signature golden crust.
  • Don’t crowd the pan: This traps steam, which prevents crisping. I suggest using a wide pan or cooking chicken breasts in batches. Give the chicken space; browning is what builds the deep flavor in chicken francese.
  • Keep the sauce silky, not thick: If the sauce reduces too much, whisk in a splash of broth. This dish should have a bright, glossy, spoonable lemon sauce and not a gravy.
  • Add extra flair with easy mix-ins: Stir capers or thin lemon slices into the sauce for a restaurant-style upgrade. For a heartier twist, add sautéed mushrooms or spinach to the pan after searing the chicken. These cook quickly and soak up the lemon-butter sauce beautifully.

How to Store This Recipe

Store leftovers in an airtight container, making sure the chicken is submerged in some of the lemon sauce to keep it moist. It will keep well in the refrigerator for 3 to 4 days. To reheat, warm gently in a skillet over low heat, spooning the sauce over the chicken as it reheats. Add a splash of broth or water if the sauce thickens in the fridge.

To freeze, store the cooked chicken and sauce separately, as otherwise the coating will have a hard time getting crispy again after thawing and reheating. Cool completely, then store in airtight freezer containers or bags. They will keep for up to a month.

Thaw overnight in the refrigerator, then warm the chicken in a covered skillet with a little broth. Heat the sauce separately until warmed through, then pour over the chicken before serving.

      1. Yes, you can substitute almond flour. However, I haven’t made that specific swap and don’t know how much more almond flour you would need. While the recipe specifically uses coconut flour for a crispy, gluten-free coating, almond flour should work too. I would start with at least 2x the amount. Keep in mind that almond flour has a coarser texture and absorbs moisture differently, so the coating may turn out slightly different. Let me know if you try it.
