How to Make Beef Stroganoff in a Slow Cooker

Gather all the low-carb ingredients and youโ€™ll be off to a great start for making a keto beef stroganoff recipe in just 10 minutes!

Chuck roast – A favorite for slow-cooking because itโ€™s cheap and softens nicely after cooking long and slow. (1) I suggest grass-fed chuck roast from White Oak Pastures.

Mushrooms – Slice them up and let them simmer in the creamy sauce. After, they are so tender and delicious!

Onion and garlic – Need I say more? How can we not add these flavorful ingredients? They are a classic component of many savory dishes.

Apple cider vinegar – Just a splash here for a little sweetness and tang!

Sour cream – This thickens the sauce and makes it super creamy!

Directions

Follow along with step-by-step, and youโ€™ll make this keto slow cooker dinner perfectly the first time you try!

  1. Arrange beef in the crockpot of the slow cooker. Cover with mushrooms, onion, and garlic. 
  2. Pour bone broth and apple cider vinegar over the ingredients. Season with salt and pepper.
  3. Cover with the lid and turn the slow cooker on. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  4. Add the sour cream and stir well to combine in the last 15-30 minutes of cooking time. If you desire a thicker sauce, sprinkle Xanthan gum over everything evenly and mix well.

Serve warm with cauliflower rice, zucchini noodles, or miracle noodles.

Store leftovers in the fridge for 3-5 days or in the freezer for up to 3 months.

Is beef stroganoff keto?

When served as meat with a creamy mushroom sauce, traditional beef stroganoff is, in fact, keto! However, the carb content skyrockets when you add noodles or serve it over rice.

What can I eat keto stroganoff with?

Stroganoff usually accompanies noodles or rice. However, these ingredients are not allowed on a keto diet. Instead, I recommend low-carb alternatives such as spiralized vegetable noodles, cauliflower or broccoli rice, spaghetti squash, or any variety of pasta from the Miracle Noodle brand.

How to thicken beef stroganoff in a slow cooker?

Youโ€™ll notice Xanthan gum is an optional ingredient in this recipe. If you find your sauce is too thin, sprinkle 1 teaspoon of Xanthan gum evenly over the surface of the meat and liquid in the last 15-30 minutes of cooking time. Mix well to combine, then leave to sit and finish cooking.

  • Pour bone broth and apple cider vinegar over the ingredients. Season with salt and pepper.

  • Cover with the lid and turn the slow cooker on. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  • Add the sour cream and stir well to combine in the last 15-30 minutes of cooking time. If you desire a thicker sauce, sprinkle xanthan gum over the top of everything evenly and mix well.
