Chai Latte Chia Pudding (Keto, Vegan, Dairy-Free)
Chai latte chia pudding is a quick and easy overnight chia pudding recipe with low-carb, sugar-free, keto, and vegan ingredients. Enjoy all the flavors of a spicy chai tea mixed in a dairy-free pudding with coconut milk!
Servings: 2 serving
Whisk sweetener, coconut milk, cinnamon, ginger, and cardamom in a small saucepan. Gently bring to a boil over medium heat. Add tea bags and steep for 5-10 minutes.
Discard the tea bag. Add chia seed and stir thoroughly. Let rest for 5 minutes, then stir again to mix the chia evenly.
Divide the pudding between two glass jars and transfer to the fridge to chill and thicken overnight.
In the morning, evenly coat the pecans and maple syrup by tossing them in a bowl. Top each portion with nuts and serve.
