Juicy chicken thighs wrapped in crispy bacon and baked to golden perfection, this five-ingredient dinner is the kind of effortless recipe that looks far more impressive than the effort behind it. It is simple enough for a busy weeknight and special enough to bring to a holiday table without changing a thing.
Preheat oven to 400 °F. Lightly grease a baking dish or oven-safe skillet.
Season the chicken thighs with salt and pepper.
Keep the thigh as flat as possible, while holding the end of a strip of bacon at one side and wrapping it around to the other.
Arrange it in the baking dish, with the bacon tail down (seam side down). Continue wrapping and placing all the thighs.
Bake for 25-30 minutes until an instant-read thermometer reads 165 °F °F in the center of the thighs.
Remove from the oven and rest for five minutes. Serve warm with optional parsley garnish and juices spooned over each thigh evenly.
Notes
Place the chicken under the broiler for 5 minutes after baking to get a crisper finish on the bacon.Prep the chicken ahead of time by seasoning and wrapping it, then store it in an airtight container until you are ready to bake.Serve: Enjoy with cauliflower or potato side dishes, soup and/or a fresh salad.Store: Keep cooled leftovers in the refrigerator for 3 to 5 days or freeze them for up to 3 months. Reheat in a skillet or oven until warmed through, ensuring frozen portions thaw overnight in the fridge first.
