  • Warm oil in a skillet over medium heat. Sauté onion and garlic for 1 minute.
    2 tablespoons coconut oil, 1 small red onion, 1 clove garlic
  • Add zucchini. Continue sautéing until soft, about 4 minutes.

  • Raise the heat to medium-high. Push the zucchini to the side and add the meat. Break apart any large clumps with a spatula. Cook until done to your liking, about 5 minutes.

  • Season meat with oregano, salt, and pepper. Mix well to combine the meat and vegetables. Serve warm.
