No Bake Custard (Keto & Carnivore-Friendly)

This no bake keto carnivore custard has the same great flavor and silky smooth texture as traditional custard but is less work to make! Make it yourself with just 5 ingredients and 10 minutes of prep time.

  • Sprinkle the gelatin over 2 tablespoons of water in a wide, shallow dish. The more surface area to cover, the better. Set aside to thicken.
    1 tablespoon grass-fed beef gelatin, 1¼ cups half and half
  • If sweetening: Warm the cream over low heat in a small saucepan on the stovetop. Add the sweetener and stir until it dissolves. Then stir in vanilla.
    If not sweetening: Add vanilla to half and half in a bowl without heating.
    1 tablespoon sweetener, ½ teaspoon vanilla extract
  • Whisk egg yolks into the half and half.
    2 raw egg yolks
  • Mix in the gelatin. Gently warm liquid over low heat until gelatin dissolves if needed.
  • Divide into individual ramekins or use one single serving dish. Chill in the refrigerator for at least 1 hour until set. Serve cold.

Notes

This recipe is great without any sweetener. However, if you’re used to sugar, you might like it best with 1-2 tablespoons of keto sweetener.
After about an hour the custard is like soft pudding. After 1.5 to 2 hours it is more like a firm custard. Longer and it's a thick creamy pudding. Overnight and it becomes chewy jello. The longer you leave it the more firm it will be, so take it out and test how you like it best.
