Carnivore Beef Stew (Crockpot Meal)

Slow cook carnivore beef stew in a crockpot for a few hours until the meat is tender and ready to eat! You’ll love the savory combination of beef shank simmered in bone broth with stew meat and salt. With zero-carbs and no fiber, this is ideal comfort food for anyone on a carnivore diet.

  • Slow Cooker 10-12 quarts

Ingredients

  • 4 pounds beef shank
  • 4 pounds chuck roast
  • 2 teaspoons salt divided
  • 2 tablespoons tallow or other cooking fat, divided
  • 4 cups Carnivore Bone Broth

Instructions

  • Cube the roast by cutting it into 1-inch square chunks. Place all the cubes in a bowl. Season with 1 teaspoon salt. Season both sides of the beef shank with the remaining 1 teaspoon.

  • Heat a heavy bottom skillet or cast iron pan over high heat. Add 1 tablespoon tallow and sear the shanks, then sear all the cubed roast. Continue working in batches until all the meat cooks. Add more fat as needed. Use tongs to flip the meat and transfer it to the slow cooker once done. Put the beef shank in the crockpot first, then layer the cubed meat on top.

  • Pour broth over the meat.
    4 cups Carnivore Bone Broth
  • Cover with a lid and cook on LOW for 8-10 hours (up to 12 hours) or HIGH for 4-5 hours (up to 6 hours).

Notes

Store leftovers in the fridge for 3-5 days or in the freezer for up to 3 months.
If you desire, it’s fine to be more liberal with the salt. I like salt and use a full tablespoon.
