Arrange the beef cubes in the crockpot of the slow cooker. Add carrots, onion, and garlic.

In a medium bowl, whisk broth and tomato paste. Pour this sauce mixture over the meat and vegetables.

Sprinkle Italian seasoning, salt and pepper evenly over all the ingredients.

Cover the slow cooker pot with a lid and turn it on. Cook on LOW for 6-8 hours or HIGH for 3-4 hours.
Add the mashed cauliflower topping to the beef and vegetables, spreading them evenly over the top. Sprinkle with an even layer of shredded cheese.

Cover with the lid again and continue cooking on HIGH for 30 minutes or until the cheese melts completely.
