No Bake Cheesecake Pudding

A no bake cheesecake pudding is the ideal keto carnivore-friendly dessert. It’s smooth and creamy sweet, plus it only calls for 3 main ingredients and 10 minutes of your time to prep it!

  • Put the sour cream in a wide dish and sprinkle the gelatin over the top. You want to cover as much surface area as possible; the wider the dish, the better. Set aside to "bloom" and thicken.
    2 tablespoons grass-fed beef gelatin, 1 ½ cups sour cream
  • Bring the water to a simmer in a small saucepan over medium heat. Whisk in sweetener, until dissolved.
    1 cup water, ¼ cup Keto sugar substitute
  • Remove saucepan from heat and add in the thickened cream. Mix well, until gelatin is completely dissolved.
  • Pour into individual pudding cups or one large serving dish.
  • Refrigerate for at least 2 hours, until set. Serve chilled.

Notes

Those on a carnivore diet may want to omit the sweetener or drizzle raw honey on the top, once set. Consider your priorities and goals; make the choice that is best for you. See the post above for more details on this.
Adding ¼ of vanilla extract instead of a keto sweetener or honey can also add flavor and subtle sweetness.
