No Bake Cheesecake Pudding
A no bake cheesecake pudding is the ideal keto carnivore-friendly dessert. It’s smooth and creamy sweet, plus it only calls for 3 main ingredients and 10 minutes of your time to prep it!
Put the sour cream in a wide dish and sprinkle the gelatin over the top. You want to cover as much surface area as possible; the wider the dish, the better. Set aside to "bloom" and thicken.
Bring the water to a simmer in a small saucepan over medium heat. Whisk in sweetener, until dissolved.
Remove saucepan from heat and add in the thickened cream. Mix well, until gelatin is completely dissolved.
Pour into individual pudding cups or one large serving dish.
Refrigerate for at least 2 hours, until set. Serve chilled.
Those on a carnivore diet may want to omit the sweetener or drizzle raw honey on the top, once set. Consider your priorities and goals; make the choice that is best for you. See the post above for more details on this.
Adding ¼ of vanilla extract instead of a keto sweetener or honey can also add flavor and subtle sweetness.
