Ingredients

  • ½ tablespoon coconut oil
  • 4 cups beet greens chopped
  • 2 ounces goat cheese
  • ¼ cup walnuts chopped
  • 2 tablespoons cranberries unsweetened

Dressing

Instructions

  • Warm the coconut oil over medium heat in a skillet. Add the beet greens and saute for 5 minutes, until all leaves are tender and bright green. Remove from heat and add to a large serving bowl or individual plates.

  • Crumble goat cheese over the greens. Add the chopped walnuts and sprinkle in the cranberries.

  • Prepare the dressing by mixing the vinegar, olive oil, salt, and pepper in a separate bowl.

  • Drizzle the dressing evenly over the salad. Toss gently to ensure ingredients are coated in the dressing.
