Ingredients
  • 1tablespoon extra virgin olive oil<-- try this one
  • 2pounds zucchinispiralized
  • 2cups spinachchopped, packed
  • 4cloves garlicminced
  • 1large lemonsjuiced
  • 2tablespoons fresh dillchopped
  • 2cans Wild Albacore Tuna<-- try this one, 6 ounce each
  • 1/4cup Kalamata olivespitted and chopped
  • 1/4cup pine nuts
  • 1teaspoon salt<-- try this one
  • 1/2teaspoon ground black pepper
Instructions
  1. Warm oil in a skillet over medium heat. Add the zucchini noodles, spinach and garlic. Cook with the lid on for 5 minutes.
  2. Stir and add lemon juice and dill. Place the lid on again and continue to cook until the zucchini is soft.
  3. Mix in tuna, olives and pine nuts. You can toast the pine nuts beforehand if you like or add them in raw.
  4. Season with salt and pepper. Taste and adjust as needed. Serve warm and dig in!
